I am a recent culinary school graduate, full time cook, recluse (when time allows…) and cry-baby who will complain to anyone willing to listen. I have a college degree from a good school that is currently of no use…other than to remind servers that I am better than them. Despite being emotionally and physically exhausted, I still love to cook and eat… and like to think that I do them both well – even if they sometimes clash with the classical techniques and philosophies of my training. There are nights that I would step on a Coq Au Vin to get to a double cheeseburger. I’m single and often starved for affection even though I do very little to look for decent companionship. I once ended a relationship with someone who tried to convince me of the musical genius of Marc Anthony (yes, J. Lo’s hubby… ) and while I have nothing personal against him (other than hating him for being rich, thin and still having all his hair), I knew that this would be a sign of worse things to come. I am obsessed with cheese, hummus, green tea, Dr. Pepper, ice water, grilled bluefish, eggplant, cigarettes and lemon tarts. and sometimes I work out. I’m a walking cliché at times who toggles between thinking I’m smarter than everyone else with better taste in everything – and being wildly insecure. If you request a substitution at my restaurant, I will probably hate you. In my mind, I know what and how you should eat. If you let me do what I want, I will move mountains to satisfy you.
