I am a full time cook, recluse (when time allows…) and cry-baby who will complain to anyone willing to listen.
I have a college degree from a “Southern Ivy League” university that is currently of no use…other than to remind other cooks and servers that I’m “smarter” than they are.
Despite being emotionally and physically exhausted, I still love to cook and eat… and like to think that I do them both well – even if they sometimes clash with the classical techniques and philosophies of my training. There are nights that I would step on a Coq Au Vin to get to a double cheeseburger.
I’m single and often starved for affection even though I do very little to look for decent companionship. I’d prefer delivery. If I were to fill out a match.com profile, under “hobbies”, I would list: cheese, hummus, orange Gatorade, television, naps, Dr. Pepper, ridiculously cold water, grilled bluefish, eggplant, cigarettes and lemon tarts.
I’m a walking cliché at times who toggles between thinking I’m more enlightened than everyone around me, with better taste in everything – and being wildly insecure.
If you request a substitution at my restaurant, I will hate you.
If you order a meal less than fifteen minutes before my restaurant closes, I will hate you.
If you let me do what I want and shut up about it, I will move mountains to satisfy you.

I came across your weblog by accident a couple of days ago (I don’t even remember what I was looking for). I’ve read some of your posts and have to tell you that I found some of your posts really interesting and amusing. I’m gIad you have the opportunity to attend culinary school and I hope you continue to do well. Like you, I really wanted to go to culinary school, but for several reasons I couldn’t (e.g., expensive, just paid off my undergrad loan, mortgage). Good news is that I’m currently attending a baking & patisserie program part-time at a JC, which according to some people in the industry, has a really good reputation. I’m really enjoying every minute of it! Just wanted to wish you all the best and I look forward to reading more from you!

Claasic comments about your arrival in Paris. I’m in a similar boat myself. The daily battle with the French to be able to use their language, as you slowly, through embarrassment at your limited oral ability, regress into speaking like a French Stephen Hawking is a feeling I’m all too familiar with.
